  • 8 eggs
  • 1 tbsp. olive oil
  • 1 medium-sized onion, diced and chopped
  • 1 medium-sized bell pepper, diced and chopped
  • 1 tbsp. minced garlic
  • ½ tsp red pepper flakes, crushed
  • 1 can of no-salt-added fire-roasted tomatoes, diced and undrained
  • 8 ounces can of no-salt tomato sauce
  • 2 tbsp. green onions, sliced
  • Corn tortillas, warmed, as per requirements
  • Salt and pepper as per your taste
