Ingredients

Grain Bowl:

  • 1/2 cup cooked brown rice
  • 1 cup roasted vegetables
  • 1/4 cup shelled edamame
  • 1/4 ripe avocado, diced
  • 2 tablespoons sliced scallions / green onions
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons Citrus-Lime Vinaigrette 

Citrus-Lime Vinaigrette:

  • 1/4 cup canola oil
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup freshly squeezed orange juice
  • 2 teaspoons minced fresh jalapeno pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  • To make citrus-lime vinaigrette, take all the ingredients and put them in a jar that has a screw-top lid. Close the lid tightly, and then shake the jar well until all the ingredients are mixed thoroughly.
  • Now for the grain bowl, take a 4-cup container or bowl that can be sealed with a lid.
  • Add cooked rice, roasted vegetables, edamame, and diced avocado to the container or bowl.
  • Top the mixture with sliced scallions and chopped fresh cilantro.
  • Just before serving, drizzle the Citrus-Lime Vinaigrette over the ingredients in the container or bowl.
  • Seal the container or bowl with a lid and either store it in the refrigerator for later or enjoy immediately.

Note: Please make sure you refrigerate the dressing and other ingredients separately. You can keep the dressing and bowl in the refrigerator separately for up to 5 days.
