Ingredients

  • 1 pound ground beef
  • 1 ounce package taco seasoning mix
  • ¾ cup water
  • 2 teaspoons chilli powder
  • ½ cup cooked rice
  • ¼ teaspoon salt
  • ¼ teaspoon garlic salt
  • ⅛ teaspoon ground black pepper
  • 2 (8 ounces) cans tomato sauce, divided
  • 3 large red bell peppers
  • 6 (1 inch) cubes Colby-Jack cheese

Directions

  • Preheat the oven to 350°F (175° C). Butter a 9x13-inch baking pan.
  • In a large skillet, heat the ground beef. Brown the meat on medium heat for 8 minutes, breaking it up into small pieces as you go. You should drain the excess fat. Mix in the taco seasoning with water, chili powder, and cooked rice.
  • Add 1 can of tomato sauce. Stir until well combined. Bring it to a boil. Reduce heat to low and simmer for 20 minutes. You can add corn or boiled beans at this stage.
  • Cut the bell peppers in half their length. Remove stems, membranes, and cores. Put a steamer insert in a large saucepan and fill it with water until the steamer is just below the top. Bring the water to boil on high heat.
  • Cover and close the steamer insert. Put the peppers in the steamer insert. Cover the pan and steam the peppers until tender (3 to 5 minutes).
  • Fill the baking dish with the steamed peppers and lightly cover them with the meat filling. Place 1 cube of Colby-Jack cheese in the middle of each pepper. Then, spoon the rest of the tomato sauce over the peppers. Protect the dish by wrapping aluminum foil around it.
  • Bake the peppers and keep them in the oven for 25-30 minutes or until they are tender. Enjoy!

Should You Boil Peppers Before Stuffing Them

When it comes to preparing stuffed peppers, there are a few different methods you can use. Some people choose to boil the peppers before stuffing them, while others do not. So, should you boil peppers before stuffing them?

The answer to this question depends totally on your preference. For a moist and juicy stuffed pepper, boiling the peppers is a good option. However, if you prefer a drier pepper, you can skip this step.

No matter which method you choose, cook the stuffing thoroughly before serving. This will ensure that the peppers are properly cooked and that the stuffing is hot and safe to eat.

You can keep some crunch by not boiling the peppers or blanching them for a couple of minutes. Don't let them get too soft, or they will lose their shape.
