Ingredients

  • 1 pound ground beef
  • 1 ounce package taco seasoning mix
  • ¾ cup water
  • 2 teaspoons chilli powder
  • ½ cup cooked rice
  • ¼ teaspoon salt
  • ¼ teaspoon garlic salt
  • ⅛ teaspoon ground black pepper
  • 2 (8 ounces) cans tomato sauce, divided
  • 3 large red bell peppers
  • 6 (1 inch) cubes Colby-Jack cheese

Directions

  • Preheat the oven to 350°F (175° C). Butter a 9x13-inch baking pan.
  • In a large skillet, heat the ground beef. Brown the meat on medium heat for 8 minutes, breaking it up into small pieces as you go. You should drain the excess fat. Mix in the taco seasoning with water, chili powder, and cooked rice.
  • Add 1 can of tomato sauce. Stir until well combined. Bring it to a boil. Reduce heat to low and simmer for 20 minutes. You can add corn or boiled beans at this stage.
  • Cut the bell peppers in half their length. Remove stems, membranes, and cores. Put a steamer insert in a large saucepan and fill it with water until the steamer is just below the top. Bring the water to boil on high heat.
  • Cover and close the steamer insert. Put the peppers in the steamer insert. Cover the pan and steam the peppers until tender (3 to 5 minutes).
  • Fill the baking dish with the steamed peppers and lightly cover them with the meat filling. Place 1 cube of Colby-Jack cheese in the middle of each pepper. Then, spoon the rest of the tomato sauce over the peppers. Protect the dish by wrapping aluminum foil around it.
  • Bake the peppers and keep them in the oven for 25-30 minutes or until they are tender. Enjoy!
