  • 2 tablespoons of white vinegar

  • 40g of natural yogurt
  • 30g of capers, finely chopped

  • 90g of salad leaves
  • 2 grated carrots
  • A small handful of parsley
  • Salt and freshly ground black pepper to taste

  • Start by heating some olive oil in a frying pan and adding the drained chickpeas and paprika. Fry them to a golden-brown and crisp perfection for 10-15 minutes.
  • While the chickpeas sizzle, prepare the pickled onions by slicing a red onion and pouring vinegar over it. Add a pinch of salt and scrunch the mixture well with your fingers to coat all the onions. Let it sit aside to pickle lightly.
  • To make the dressing, grab another small bowl and mix some yogurt, capers, and garlic. Season it well with salt and pepper to give it that extra oomph!
  • Once everything is ready, assemble the salad by tossing some salad leaves in a bowl with grated carrots and pickled onions. Top it off with the crispy chickpeas and a small handful of parsley. Finally, drizzle the dressing over the salad to complete this delectable dish.
