  • 1.5 cups diced yellow onion 
  • 4 cups no-salt-added chicken broth 
  • 2 cups reserved gravy 
  • 4 cups previously roasted vegetables, chopped into bite-sized portions 
  • 3 cups shredded cooked turkey 
  • 2 tbsp. freshly chopped flat-leaf parsley 
  • 1/4 tsp. sea salt 
  • 1/4 tsp. freshly ground black pepper

Instructions

  • In a large, heavy pot, warm oil over medium-high heat. 
  • Sauté onion until softened and slightly browned, about 6 minutes. 
  • Combine broth and gravy, bringing to a boil while stirring. 
  • Add leftover vegetables and turkey, heating for 2-3 minutes while stirring. 
  • Mix in parsley, salt, and pepper.

In case you don't have any leftover gravy: In a saucepan over medium-high heat, combine 1/4 cup all-purpose flour and 1/4 cup unsalted butter, stirring continuously for 1 minute. Gradually whisk in 2 cups of unsalted chicken broth while continuing to stir. 

Allow the mixture to thicken by cooking for about 2 minutes, stirring occasionally. Finally, mix in 2 teaspoons each of freshly chopped sage and thyme, along with 1/4 teaspoon each of salt and ground pepper.
