Ingredients

  • 1 tablespoon canola oil 
  • 6 ounces vegan spicy smoked sausage (such as Field Roast Smoked Apple Sage Sausage), casings removed, sausage chopped 
  • 2 cups chopped onion 
  • 1 cup chopped red bell pepper 
  • 1 cup chopped celery 
  • 2 medium jalapeño peppers, seeded and minced 
  • 1 cup long-grain white rice 
  • 2 cups low-sodium vegetable broth 
  • 1 (15-ounce) can of no-salt-added diced tomatoes, undrained 
  • ½ teaspoon ground pepper 
  • ¼ teaspoon salt 
  • ½ cup chopped scallions

Instructions

  • In a sizable skillet, heat the oil over medium-high heat. Add the sausage and heat, stirring frequently, for 4 to 5 minutes, until browned. 
  • Add the onion, bell pepper, celery, and jalapenos; simmer, turning occasionally, for 5 to 6 minutes or until the veggies are tender.
  • Add the rice and toss to coat. Add the tomato juice, broth, pepper, and salt, then allow the mixture to boil.
  • Reduce heat to medium-low; cover and simmer for 20 minutes or until the rice is tender.
  • Add some onions or parsley on top.

The Native American Atakapa tribe claims that the word originated from the phrase "Sham, pal ha! Ya!" meaning "Be full, not skinny! Eat Up!" which is equivalent to the French "Bon appétit!" The phrase "jambalaya" may have been influenced by Spanish.

While the exact origin of jambalaya is unknown, it is believed to have resulted from a mix of ethnicities in the port of New Orleans. The dish has influences from Spanish, French, African, Native American, and Caribbean cooking styles and produce.
