  • 1 tablespoon canola oil 
  • 6 ounces vegan spicy smoked sausage (such as Field Roast Smoked Apple Sage Sausage), casings removed, sausage chopped 
  • 2 cups chopped onion 
  • 1 cup chopped red bell pepper 
  • 1 cup chopped celery 
  • 2 medium jalapeño peppers, seeded and minced 
  • 1 cup long-grain white rice 
  • 2 cups low-sodium vegetable broth 
  • 1 (15-ounce) can of no-salt-added diced tomatoes, undrained 
  • ½ teaspoon ground pepper 
  • ¼ teaspoon salt 
  • ½ cup chopped scallions


  • In a sizable skillet, heat the oil over medium-high heat. Add the sausage and heat, stirring frequently, for 4 to 5 minutes, until browned. 
  • Add the onion, bell pepper, celery, and jalapenos; simmer, turning occasionally, for 5 to 6 minutes or until the veggies are tender.
  • Add the rice and toss to coat. Add the tomato juice, broth, pepper, and salt, then allow the mixture to boil.
  • Reduce heat to medium-low; cover and simmer for 20 minutes or until the rice is tender.
  • Add some onions or parsley on top.

What Does ‘Jambalaya’ Mean?

The exact origins of the word jambalaya are uncertain, although there are many theories, none of which have been confirmed. One theory suggests that the French word for ham, "Jambon," was combined with the African word for rice, "Aya," as many slaves lived in Louisiana at the time when the dish is believed to have originated.

Another theory is based on an old story of a traveler staying in a guest house in Louisiana who asked the cook, Jean, to "sweep something together" in French. The phrase eventually evolved into "Jean, balayez!" and ultimately became "jambalaya."

Andrew Sigal has proposed another origin for the word "jambalaya," based on the Provençal word "jambalaia," which first appeared in a French-Provençal dictionary in 1878. The definition described it as being a mishmash or rabble, much like the dish itself.

The Native American Atakapa tribe claims that the word originated from the phrase "Sham, pal ha! Ya!" meaning "Be full, not skinny! Eat Up!" which is equivalent to the French "Bon appétit!" The phrase "jambalaya" may have been influenced by Spanish.

While the exact origin of jambalaya is unknown, it is believed to have resulted from a mix of ethnicities in the port of New Orleans. The dish has influences from Spanish, French, African, Native American, and Caribbean cooking styles and produce.

The Cost Factor!

Jambalaya was created as an inexpensive meal with readily available ingredients. It first became popular at church fairs and soon became a staple of gatherings such as weddings, political rallies, and family get-togethers.

The dish grew in popularity during the 1930s due to the economic downturn. Until recently, cooking in Louisiana was mainly restricted to the local area, resulting in a broad range of variations of the dish.

Today, jambalaya remains a firm favourite in Louisiana and is a big part of social gatherings. It is a unique and unifying dish that is likely to be enjoyed by generations to come.
